One of my favorite recipes. Its Gluten & Dairy Free & delicious! If you use Bone Broth it will be very healing to the gut.
Creamy Squash Soup with shrimp
Saute in coconut oil 1 chopped yellow onion, few cloves crushed garlic & a small 1" piece fresh shredded ginger...
2 Tbsp Thai Red Curry paste
1 whole butternut squash (peel & chop)
Cover with 4 cups broth (preferably made from scratch)
1 can pumpkin puree
Stir, cover, cook on low for 30 minutes
Blend with hand immersion blender
Add 1 can coconut milk
Add 2lb peeled & deveined shrimp (I usually use frozen & cook for an additional 5-10 minutes
